Micro-Lot Description: Hand-harvested Caturra cherries were floated for quality selection, then fermented in sealed bags under anaerobic conditions for 72 hours. After fermentation, the cherries were depulped using disc depulpers and slowly machine-dried. This controlled process delivers a clean honey profile with balanced sweetness, soft fruit notes, and a structured, well-rounded cup.
